This coffee lot is grown in Flores Island’s rich volcanic soil, resulting in a distinct flavour profile. It delivers a silky body with juicy characteristics and a lingering dessert like sweetness in the aftertaste.
Indonesia has a long and deeply rooted coffee history that dates back to the late 17th century, when the Dutch brought the first Arabica plants from Yemen to the island of Java. Thanks to the country’s volcanic soil, tropical climate, and mountainous landscape, coffee adapted quickly and became one of the most important exports of the Dutch East Indies. Over time, Indonesian coffee gained worldwide recognition, and the name “Java” itself became closely associated with coffee culture around the world.
Producer: Tuang Coffee Cooperative
Tuang Coffee Cooperative is based in Ruteng, in the Manggarai region of Flores, Indonesia. The project began in 2014 when Andre Tuang left Jakarta and returned to Flores to work directly with local coffee farmers. At the time, most coffee from the region was sold as commodity grade or blended with coffees from Sumatra, Java, and Toraja, with farmers receiving little recognition or fair payment. By 2026, Tuang had grown to more than 2500 farmer members working through 17 community leaders across the region.
Once the cherries arrive at the Tuang processing station, the team first spreads them across tarpaulins or raised beds to inspect quality and remove any underripe or damaged fruit. The coffee is then pulped and fermented in tanks for around 36-48 hours before being fully washed and cleaned. After washing, the parchment coffee is moved onto raised drying beds for 7-10 days. During drying, the coffee is turned regularly throughout the day to ensure even moisture loss and stable drying conditions. Once the target moisture content is reached, the coffee is rested before milling, hand sorting, and bagging. The finished coffee is then transported by boat from Flores to Java, before continuing through the port of Surabaya for export.
